Arkansas Sugar Cookies


  • 1 cup butter (softened)
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cups sifted all purpose flour
  • batch of vanilla frosting, optional

Vanilla Frosting
  • 3/4 cup powdered sugar, sifted
  • 1 tablespoon butter, melted
  • 1 tablespoon milk
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon lemon juice
  • several drops of food colouring of your choice, optional


  1. Cream together butter and sugar.
  2. Beat in egg.
  3. Add vanilla, salt, and flour. Mix until all ingredients are well-blended.
  4. Chill the dough 3-4 hours before rolling.
  5. Preheat oven to 350°F.
  6. Roll out dough to 1/4 inch thick. Cut dough into shapes using cookie/biscuit cutters or drinking glasses.
  7. Place on cookie sheet(s) and bake 8 to 10 minutes or until barely coloured.
  8. Remove from cookie sheet(s) and cool on wire racks.
  9. If desired, allow cookies to cool, then frost. Otherwise, cookies may be consumed plain.

Vanilla Frosting:
  1. Combine all ingredients and beat until smooth.
  2. Add in food colouring, if desired. Stir until well-combined.
  3. Pipe or spoon onto cooled cookies and allow to set.
