Southern Breakfast Burritos


Ingredients:

  • 1/2 pound ground breakfast sausage
  • 6 eggs
  • shredded cheese of your liking, i prefer cheddar ,optional but seriously, who is leaving cheese out of the breakfast burrito??!
  • 1 bunch green onions, chopped coarsely
  • salt, pinch
  • pepper, pinch (or if you're like me, five pinches)
  • sriracha sauce or chalula sauce (or another hot sauce of your choice)
  • 1 pkg flour tortillas

Directions:

  1. Brown sausage in skillet, breaking up the pieces into smaller bits.
  2. Drain the fat from the sausage. I like to save the fat in a small ramekin for use in other dishes through the week.
  3. Whisk eggs with the chopped green onion, salt, pepper, and hot sauce.
  4. Return sausage to skillet and place on low heat.
  5. Add in the egg mixture over the top of the sausage in the skillet - don't stir too much!
  6. Keep the heat on low and cook until the egg is done.

Assembly:

  1. Place a tortilla on your work surface.
  2. Add a liberal amount of shredded cheese in a log shape in the middle of the tortilla.
  3. Add in some of the egg mixture on top of the cheese.
  4. Fold one side over the filling and pull backwards, then roll 1/2 forwards, fold in the left side and roll forward, fold in the right side and roll forward until burrito is completed.
You can promptly wrap in parchment paper so that the contents set up and the fold will stay better.
