<font size="3"><b><u>Ingredients:</u></b></font>
*1 avocado, ripe
*1 jalapeño pepper, stem removed & quartered
*1 cup water
*1 tablespoon white vinegar
*1/2 teaspoon salt
*2 tablespoons fresh parsley, minced
*2 tablespoons onion, diced

<font size="3"><b><u>Directions:</u></b></font>
#Combine the avocado, jalapeño, water, vinegar, and salt in a food processor.
#Pureé the mixture for several seconds on high speed, or until the pepper is finely minced.
#Pour the mixture into a medium bowl. Stir in the parsley and onion.
#Cover and chill salsa in the fridge until you are ready to serve it.
::<i>Yields approximately 1 1/2 cups.</i>
