Ingredients:
- 1/2 pound ground breakfast sausage
- 6 eggs
- shredded cheese of your liking, i prefer cheddar ,optional but seriously, who is leaving cheese out of the breakfast burrito??!
- 1 bunch green onions, chopped coarsely
- salt, pinch
- pepper, pinch (or if you're like me, five pinches)
- sriracha sauce or chalula sauce (or another hot sauce of your choice)
- 1 pkg flour tortillas
Directions:
- Brown sausage in skillet, breaking up the pieces into smaller bits.
- Drain the fat from the sausage. I like to save the fat in a small ramekin for use in other dishes through the week.
- Whisk eggs with the chopped green onion, salt, pepper, and hot sauce.
- Return sausage to skillet and place on low heat.
- Add in the egg mixture over the top of the sausage in the skillet - don't stir too much!
- Keep the heat on low and cook until the egg is done.
Assembly:
- Place a tortilla on your work surface.
- Add a liberal amount of shredded cheese in a log shape in the middle of the tortilla.
- Add in some of the egg mixture on top of the cheese.
- Fold one side over the filling and pull backwards, then roll 1/2 forwards, fold in the left side and roll forward, fold in the right side and roll forward until burrito is completed.
- You can promptly wrap in parchment paper so that the contents set up and the fold will stay better.
