El Pollo Loco Avocado Salsa

Ingredients:
- 1 avocado, ripe
- 1 jalapeño pepper, stem removed & quartered
- 1 cup water
- 1 tablespoon white vinegar
- 1/2 teaspoon salt
- 2 tablespoons fresh parsley, minced
- 2 tablespoons onion, diced
Directions:
- Combine the avocado, jalapeño, water, vinegar, and salt in a food processor.
- Pureé the mixture for several seconds on high speed, or until the pepper is finely minced.
- Pour the mixture into a medium bowl. Stir in the parsley and onion.
- Cover and chill salsa in the fridge until you are ready to serve it.
- Yields approximately 1 1/2 cups.
