El Pollo Loco Avocado Salsa


Ingredients:

  • 1 avocado, ripe
  • 1 jalapeño pepper, stem removed & quartered
  • 1 cup water
  • 1 tablespoon white vinegar
  • 1/2 teaspoon salt
  • 2 tablespoons fresh parsley, minced
  • 2 tablespoons onion, diced


Directions:

  1. Combine the avocado, jalapeño, water, vinegar, and salt in a food processor.
  2. Pureé the mixture for several seconds on high speed, or until the pepper is finely minced.
  3. Pour the mixture into a medium bowl. Stir in the parsley and onion.
  4. Cover and chill salsa in the fridge until you are ready to serve it.
Yields approximately 1 1/2 cups.
