Ingredients:
- Cookie:
- 1 cup butter (softened)
- 2/3 cup sugar
- 1 egg
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon salt
- 2 1/2 cups sifted all purpose flour
- batch of vanilla frosting, optional
- Vanilla Frosting
- 3/4 cup powdered sugar, sifted
- 1 tablespoon butter, melted
- 1 tablespoon milk
- 1/2 teaspoon vanilla
- 1/4 teaspoon lemon juice
- food colouring of your choice, optional
Directions:
- Cookie:
- Cream together butter and sugar.
- Beat in egg.
- Add vanilla, salt, and flour. Mix until all ingredients are well-blended.
- Chill the dough 3-4 hours before rolling.
- Preheat oven to 350°F.
- Roll out dough to 1/4 inch thick. Cut dough into shapes using cookie/biscuit cutters or drinking glasses.
- Place on cookie sheet(s) and bake 8 to 10 minutes or until barely coloured.
- Remove from cookie sheet(s) and cool on wire racks.
- If desired, allow cookies to cool, then frost. Otherwise, cookies may be consumed plain.
- Vanilla Frosting:
- Combine all ingredients and beat until smooth.
- Add in food colouring, if desired. Stir until well-combined.
- Pipe or spoon onto cooled cookies and allow to set.
